Broccoli, kale, red cabbage, and Brussels sprouts: nutritional differences
Frequently Asked Questions
Is kale better than broccoli?
There's no hierarchy. Kale has more vitamin K and fiber per serving; broccoli has more glucoraphanin. They have complementary profiles. The more useful question is not which is better but how to combine them.
Does red cabbage have the same glucosinolates as broccoli?
It has comparable amounts of glucoraphanin, but its distinguishing characteristic is anthocyanins—absent in green broccoli. The purple color is the visual signal of that biochemical difference.
Are Brussels sprouts more nutritious than broccoli?
They have a more diverse glucosinolate profile and high levels of vitamin C and K, but also more goitrogens per serving. They are not "more nutritious" in general: they are different, with their own advantages and disadvantages.
